Welcome to The Dock! A brand-new coffee shop experience located in the main lobby, on the ground floor of The Connacht Hotel. As you walk through the doors you’ll be greeted with a smile by our friendly, expertly trained barista team.

Our Coffee
At The Dock our specialty coffee is sourced directly from local coffee roaster ‘Eighty9’.
‘Eighty9’ – from JJ Darboven, is a small batch coffee roaster from Dun Laoghaire in Co. Dublin. This premium coffee makes the perfect blend – providing a full-bodied, round & spicy experience, with a light sweetness to suit all tastes.
Eighty9’s zero waste policy perfectly complements our green initiatives running throughout the hotel. With all our coffee deliveries coming in reusable tins that allow for the freshest coffee as well as zero packing waste.

Our Team
David – Head Barista
Having worked with coffee for over a decade, our head barista David definitely knows a thing or two about a quality cup of coffee.
Having completed his training in Dublin, David went on to work in a number of prominent coffee chains throughout the years. He has learned from baristas all across the world. On his travels abroad he has honed his craft from some of the best and brought his professional knowledge to us here in The Dock.
Of all the coffees he can make, David is particularly proud of his cappuccino. He is aware of all the technicalities that go into making the perfect cup, from the temperature to the froth and of course the espresso. The combination is one of pure science….and taste.
Luc – Pastry Chef
Luc began his journey as a chef with his training in Bordeaux in France. Later spending 5 years as an apprentice, focussing exclusively on pastry. Following his training, he continued to work in France for a number of years where he found his footing in a local patisserie as a sous chef.
Wanting to explore the world a bit more, Luc made his way to Ireland, where he found his place here in Galway. After growing fond of the place and the people he decided to stay and see what more Galway had to offer.
Being able to develop his skills in our kitchen is something he loves and he’s excited to experiment with new flavours and creations for The Dock as it continues to grow. There are plenty of ideas for future treats and seasonal selections that are sure to make their way onto our shelves soon.
